Ingredients

  • 5 Romanesco courgettes

  • 8 tablespoons extra virgin olive oil

  • 1/2 teaspoon sweet paprika

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon turmeric

  • 1 pinch of pepper

  • Very little garlic powder

  • 1/2 cup breadcrumbs

  • 1 pinch of salt

Directions

  • Remove the ends of the courgettes, wash them and cut them into thin slices.
  • Put the courgettes in a large bowl and pour in the oil, stirring with a spoon so that the oil is all over the courgettes (this will make it easier for the breadcrumbs to stick to them).
  • Put the breadcrumbs, spices, salt and pepper in a bowl, mix everything together, add half of the breadcrumbs and mix, then add the rest of the breadcrumbs and mix again.
  • Place the courgettes on a baking tray lined with greaseproof paper and bake for 40 minutes at 150 degrees.
  • All that remains is to serve this miracle.

Notes

  • I would like to point out that this recipe, like many others on the website, can also be made by hand, i.e. we can use as many courgettes as we have or want to eat. As for the spices, I use a teaspoon metric, but if you don’t like any spices, you can do without or add less.

Spicy courgette gratin

For the past year, without realising it, I have been on a spice kick! I now put spices everywhere.

The smell of summer is overwhelming our hearts and I want to overwhelm your palate with this incredible recipe. We are now in the heart of summer and our days are marked by moments that will be unforgettable for some. A few days ago I was out and about and I came across a greengrocer who produces everything he sells on his stall, a stall not full of illusion but full of flavour, history, emotion and effort. So I stopped and, after exchanging a few friendly words with him, I returned home with the idea of preparing this recipe that I am about to offer you. I realised that I had been preparing this recipe for more than a year and had not yet shared it with you, so I am here to remedy that immediately.

Ingredients for the recipe

As mentioned above, you will need Roman courgettes to prepare this recipe!

They are the best for this recipe because they contain little water and are an unparalleled explosion of flavour. The spices are sweet and smoked paprika, pepper, turmeric, garlic powder, salt and breadcrumbs. For the breadcrumbs, as mentioned in a previous recipe, I recommend Mulino Bianco breadcrumbs, as their consistency at the end of cooking makes them more palatable. Spices and breadcrumbs should be prepared beforehand in a cup or glass and mixed well together.

Finally, the last component of the recipe is the ubiquitous oil. I recommend an oil that is not very strong, but delicate, so as not to overwhelm the other flavours.
